Jicama Salad Recipe | Simply Recipes

I found this recipe that sounds good and should fit in the HMR diet. I love Jicama and it has hardly any calories. You have to zip it up with something, though. I like it with a dash of lime and a light sprinkle of red pepper. Gives it a nice zing.

* 1 large jicama (about 1 1/2 pounds), peeled, then julienned or cubed (easiest to work with if you cut the jicama in half first) * 1/2 red bell pepper, finely diced * 1/2 yellow bell pepper, finely diced * 1/2 green bell pepper, finely diced * 1/2 cup chopped red onion * 1/2 a large cucumber, seeded, chopped * 1 navel orange, peel cut away, sliced crosswise, then each round quartered * 1/2 cup chopped fresh cilantro * 1/3 cup lime juice * Pinch of cayenne * Pinch of paprika * SaltOptional * 1/2 avocado chopped * 2 Tbsp olive oilMethod1 Toss together the jicama, bell peppers, red onion, cucumber, orange, and cilantro in a large serving bowl. Pour lime juice over all. Sprinkle with a pinch of cayenne and paprika. Season generously with salt.2 Let sit a half an hour before serving.Serves 4.

Dr. Visit

Went to my regular MD today. I've lost 42 pounds. He was astonished. You should have seen his face. I hadn't been there in a while. He was very happy and excited. He said,"If you knew how hard I have to work to get some people to lose just 2 pounds, you'd know how happy I am about your weight loss."

That made me feel pretty great. He was very encouraging. He is a big believer in HMR and was glad I was doing it. (I went thru a different doctor than my regular MD for HMR, so this was the first he knew about it.)

I left feeling pretty good, but knowing I still have a long way to go.
